Second, cooking and cooling: the cut carrot (10kg as an example) into the steam closed fumigation, every interval is generally mastered in 5-7 minutes, the soluble solid content after steaming is 10.5%. The cooling water temperature is generally between 0 ° C and 15 ° C, and after fumigation, it is necessary to immediately enter the water to rapidly cool it to 15 ° C, so that it is easy to maintain the primary color of the product and achieve the purpose of cooling.

3. Drain drying: After the cooled carrot slices drain for 3-5 hours, cut them into 3-5 mm thick sheets into the drying room to be baked. The drying room must be drained of steam, keep the temperature 4° C-6° C, heating equipment is best to use electricity, in the use of coal stove or charcoal heating fire source must be isolated from the drying room to keep the air in the room clean. The drying time is 5-6 hours, the final net weight reaches 0.12kg, and the water content is reduced to 10%. Take out the dried carrot slices and put them in 350ml sodium chloride solution to fully dissolve, and the sulfur dioxide content in the solution is reduced to the minimum. Then take out the carrot and leave it for 20 minutes before placing it in the oven to continue drying. Until the net weight reaches 1.4 kg, the salt content of the final product is 8%, the water content is 15%, and the activity of the water under 20° C is 0.45.

4. Sorting and packaging: According to the diameter of the product, it is divided into large, medium and small 3 categories of graded packaging, and the packaging environment must be dry and clean, fresh air and appropriate temperature. The material should be non-toxic, odor-free, breathable and moisture-proof, 0.08mm thick polyethylene film bag. Each 0.5 kg is a bag. The outer packing is made of a carton with a moisture-proof oil layer and lined with a clean wax paper or film. The net weight of each box is 50 kg, the bags are arranged in layers, the box is sealed with tape, marked and stored in an environment where the temperature is 12-2° C, the relative humidity is not more than 60%, and the strong light radiation is avoided. The processing and storage quality can enter the market after the rehydration degree is identified at the time of discharge.
